Chili recipes (and sides)...here's to the weekend

Hi Friend,

It's been so cold here in WI this week that they closed schools! My whole week has been off kilter, the kids had Friday + Monday off of school, then Tuesday because of the cold, so it's taken a minute to get my schedule back on track. How about you - how's your week been? On weeks like this, there's nothing better than a comforting bowl of delicious chili, so today I'm sharing chili recipes and sides to make!

Theme of the week: chili + sides

Easy stovetop chili

This easy stovetop chili is just what you need! It’s rich with ground beef, savory mushrooms (optional), and a medley of beans, all cooked together with tomatoes and spices for a delicious, no-fuss dinner. Plus, it all comes together in one pot, making clean-up a breeze AND it’s done in under an hour!

White chicken chili

This shortcut white chicken chili recipe is ready in under an hour and super flavorful! It’s the perfect easy dinner on a cold winter night.

Slow cooker chili bar

Everything you need to make a delicious slow cooker chili, along with topping ideas for how to set up a chili bar!

Chili con carne

This recipe for chili con carne is packed with flavor and can also be made in an Instant Pot or slow cooker. I share both ways in the recipe card and you’ll be enjoying a bowl in no time.

IP Vegetarian chili

This Instant Pot vegetarian chili (eggplant chili) is definitely going to be one we make regularly. It’s full of vegetables and healthy ingredients, plus it makes a generous batch; perfect for leftovers!

Now let's talk sides!! Nothing goes better than some cornbread! I love making skillet corn bread or muffins or this incredible cheddar jalapeno bread!

Skillet cornbread

I am such a huge fan of cornbread. Not just any cornbread though, it has to be the perfect slightly sweet cornbread with a little crumble-yet-softness to it, deliciousness in every bite, which is why I’m sharing the recipe that I have made for years and years that is my go-to when making cornbread: slightly sweet skillet cornbread.

Sweet potato cornbread muffins

You know how normally cornbread muffins can tend to be super dry after baking? Well these cornbread muffins are made with sweet potato puree so they stay nice and soft!

Cheesy jalapeno pull apart bread

OMG, this bread! It's so yummy. You can make it as a pull apart bread or slice it. It goes so well as a side to chilis.

On the blog this week

In this weeks love list I’m sharing some fun vinyls I’ve gotten (I’ve been listening to music as I clean clean clean and cook cook cook and do laundry, all on repeat, never ending lol, made bearable by good music and audiobooks). We also got the best toaster oven after our cheap model broke and I’m sharing crazy cool chocolates (they're so pretty and taste so good) you need in your life.

Chocolate marshmallow rice cakes snack

You only need 3 ingredients for these fun snacks, and the kids will love them! Perfect for after-school treats, party snacks, or a sweet pick-me-up during the day, these rice cakes are as easy to make as they are to enjoy.

Personal Stories

We went to a Japanese hibachi restaurant with Nicks family. OMG so fun. The kids and their reactions were just so sweet.

We had lots of at home time because of the school closures. One day I took the kids to Target. Don't ask me what my total was lol. Another day one of the kids' aunts came over and did crafts with them.

And last weekend the 3 older kids got to perform with their Serbian dance group at the Pathers arena and then got cupcakes after!
